Friday, February 4th

9:30am - 2 pieces of apple cinnamon manna bread with almond butter

10:30am - low fat cappuccino

12:00 -
Roasted vegetables, vege quesadilla, sour cream, salsa, refried beans, mixed greens, egg salad

6pm -
Cut fresh vegetables with hummus

6:30pm -
Steamed edamame

7:30pm -
Thai red curry with coconut milk, mushrooms, green beans, eggplant, vege mutton and white rice (2 helpings)

8:30pm -
Earl grey tea with milk

  1. Were the 2 helpings of rice = 2 cups cooked? Remember to use a measuring cup for portions of cooked carbohydrates and if possible as a serving utensil for curries, sauces, stews etc.

  2. Thx. I've started using a measuring cup for carbs. Will do the same for other foods where possible.
